The handpicked fruit is whole bunch pressed and the unclarified juice is then barrel fermented. The wine is regularly stirred in barrel over its 9 or so months maturation to build palate weight and complexity. The wine typically does not see malolactic fermentation.

Paringa Estate
Established in 1985 by owner and winemaker Lindsay McCall, Paringa Estate is located in the heart of the Mornington Peninsula. The winery has 4.2 hectares of vines planted to Pinot Noir, Chardonnay, Shiraz and Pinot Gris. A former school-teacher, winemaker Lindsay McCall possesses a rare Midas touch, producing a number of wines that have garnered a swag of show awards over the years. Paringa produces three ranges of wines; the entry-level Peninsula range, the compelling Estate range and the top-tier Paringa series range featuring The Paringa Pinot Noir and The Paringa Shiraz.
